Confession: I am a MAJOR fan of pulled pork. MAJOR. Not only does it taste delicious almost anyway you prepare it, but its easy as heck to make. Anything that can be made in the crockpot is a winner in my book. I’m all about dem lazy and delicious (and healthy, duh) meals. After a nice long training session the other day, I was happy to come home to my crockpot filled with my perfectly cooked pork shoulder. I realized I needed some post workout carbs to add into my meal…and as I looked around my kitchen, I saw dazzling rays of light shooting out of the sweet potatoes on my counter. Yep, pretty much happened like that. So I stuck those puppies in the oven and created this little masterpiece. The bbq sauce is from The Civilized Caveman and it is delicious- both sweet and spicy. The recipe makes a pretty big batch, so share some with your paleo friends if you don’t think you’ll be able to use it all up! I like to make it ahead of time and freeze part of it, so I always have some on hand when I need it. Molly’s tip of the day right there.
