  • 4 Chicken Thighs (Or your choice of chicken cuts)

  • 1 Large Bell Pepper, chopped

  • 5 Mushrooms Sliced

  • 1 Onion diced

  • 3 garlic cloves crushed

  • 1 can diced tomatoes

  • 1 Cup water or chicken stock

  • 1 Tbsp. Capers

  • 1 Tbsp. basil

  • 1 Tbsp. Oregano

  • Coconut Oil

  • Seasonings

Directions:

  1. Add the coconut oil In a fry pan over high heat

  2. Cook chicken on each side for about 5 minutes

  3. Remove the chicken and leave to rest

  4. Cook onions, garlic, bell peppers and mushrooms for about 5 minutes or until the onion is soft

  5. Add the chicken, diced tomatoes, water, capers and herbs

  6. Cover and allow to simmer for about 30 minutes

  7. Serve
