Ingredients:

  • about 500g (1 pound) chicken breasts

  • 1 onion, sliced in rings or thin strips

  • 3 capsicum (bell peppers) of any colour cut in strips

  • 1/2 tsp salt, 1-2Tbsp cumin, 1/2 to 1-1/2tsp chilli powder, 1/2 tsp onion powder

  • [Or use a packet of fajita spice mix if you prefer]

  • 2-3Tbsp of lime juice

  • 1/2 cup chicken broth (optional)

Directions:

  1. Combine the sliced onion and bell peppers in the bottom of the crock pot

  2. Lay chicken breasts on top

  3. Sprinkle seasonings

  4. Add broth and lime juice

  5. Cover and cook at least 4 but up to 10 hours on low

  6. When done, shred the chicken with two forks right in the pot

  7. Use a slotted spoon or pasta spoon to scoop out the mixture

  8. Spoon on preferred toppings and serve
