  • 1.8kg Pork Loin

  • Olive oil

  • Salt & Pepper

    Optional:

  • 2 Brown Onion quartered

  • 2 Carrots cut into chunks

  • 1 Sweet potato cut into chunks

  • 1 bulb of garlic

Directions:

  1. Take pork out of the fridge & packaging

  2. Place pork to the side.

  3. Preheat the oven to 240°C or 485°F

  4. If having vegetables, place vegetables into a large roasting dish

  5. Lightly drizzle vegetables with olive oil

  6. Score the pork skin at about 1 cm intervals with a sharp knife

  7. Drizzle the pork with olive oil

  8. Rub salt into pork

  9. Place pork into the oven dish with the vegetables

  10. Put the dish straight into the oven

  11. Immediately turn the heat down to 200°C or 390°F

  12. Cook for about 1 hour or until the pork is cooked

  13. Remove pork from the oven

  14. Transfer the pork to a board to rest

  15. Remove the crackling from the pork

  16. Let it rest for roughly 15 minutes

  17. Once rested, slice the pork

  18. Serve with the vegetables
