Ingredients:

  • 1 head cauliflower

  • 2 teaspoons olive oil

  • 4 green onions, chopped

  • ½ red bell pepper, thinly sliced

  • 1 can albacore tuna, in water

  • 2 eggs

  • Sea salt and black pepper

Directions:

  1. Grate all of the cauliflower using a food processor with a grating blade

  2. In a large skillet or wok, heat olive oil over medium heat

  3. Sauté onions and bell peppers for about 3 minutes

  4. Add the tuna and eggs

  5. Stir to combine

  6. Add the grated cauliflower once eggs has set

  7. Mix to combine

  8. Season with salt and pepper

  9. Reduce heat to low

  10. Cover and cook for another 5 minutes before serving
