  • ½ zucchini, chopped

  • ½ red pepper, chopped

  • 2 mushrooms, chopped

  • Leaks, chopped

  • Coconut oil

  • 4 eggs

  • ¼ cup Coconut milk

  • ½ tsp Chopped parsley

  • ½ tsp salt

  • ¼ tsp pepper

Directions:

  1. Preheat oven to 350 degrees

  2. Place chopped vegetables in a bowl and mix

  3. Cook vegetables in a pan with 1 tsp coconut oil for about 5 minutes over medium heat

  4. Set vegetables aside to cool

  5. Crack eggs in a bowl

  6. Add coconut milk to eggs

  7. Add chopped parsley

  8. Season egg mixture with salt and pepper

  9. Mix egg mixture until thoroughly mixed

  10. Add vegetables to the egg mixture

  11. Grease muffin pan with butter

  12. Pour the egg mixture ¾ through each muffin pan hole

  13. Bake for about 25 minutes

  14. Serve and enjoy
