Ingredients:

  • 1 small avocado, ripe

  • 4 tbsp mixed seeds (it can be pumpkin, sunflower, and sesame)

  • 3 - 4 tbsp chopped fresh coriander

  • 150 g / 5 ½ oz short grain brown rice

  • 1 ½ tbsp soy sauce or tamari

  • 4 - 6 radishes (depending on the size, cut these into quarters or eighths lengthways)

  • 5 cm / 2 in pc peeled fresh root ginger

  • 1 tsp cloudy apple cider vinegar

Directions:

  1. In a saucepan, bring the rice and 1 cup of water to a boil

  2. Place the lid on the saucepan once it becomes bubbly and turn the heat to a very low setting

  3. Let the rice simmer for 25 minutes

  4. Turn off the heat but only remove the lid after 5 minutes

  5. Shave the ginger into very thin strips

  6. Transfer rice into a mixing bowl

  7. Add the soy sauce or the tamari sauce, and apple cider vinegar

  8. Toss the ingredients together

  9. Mix in the seeds, ginger shavings, radishes and a little of the coriander

  10. Slice the avocado into either gondola shaped or chunks

  11. Divide the dish into two small bowls

  12. Place the avocado slices on top together with the remaining coriander leaves
