  • 2 large sweet potatoes, peeled and chopped

  • 5 large carrots, peeled and chopped

  • 1 tablespoon of fresh ginger peeled and grated

  • 3 1/2 cups vegetable broth

  • a few green onions for garnish

Directions:

  1. Place all ingredients on the crock pot and cover

  2. Cook for 4 hrs on high or 8 hrs on low

  3. Puree ingredients using a food processor or hand blender or blender (you can do this in batches)

  4. Return the pureed ingredients to crock pot

  5. Place on serving bowls

  6. Sprinkle green onions to garnish and serve
