Ingredients:

  • 8 egg roll wrappers

  • 3 medium avocados cubed

  • 1/4 cup of red onion chopped

  • 1/4 cup of sundried tomatoes roughly chopped

  • 2 tbsps cilantro chopped

  • juice from 1/2 a lime

  • sea salt, black pepper, & coconut cooking spray

Directions:

  1. Add avocados, red onion, sundried tomatoes, and cilantro in a bowl

  2. Mix ingredients together gently

  3. Squeeze lime into the mixture

  4. Season with sea salt and black pepper

  5. Scoop a little bit of the filling and place in the center of an egg roll wrapper

  6. Fold over the bottom of the wrapper

  7. Fold over the sides of the wrapper

  8. Put a little bit of water on the unfolded edges

  9. Roll to seal the egg roll

  10. Do the same procedure until all the you use up all the avocado filling

  11. Place on a baking sheet with parchment paper

  12. Spray some coconut cooking spray to the rolls

  13. Bake in the oven on 350° for 15-20 minutes

  14. Flip rolls halfway through baking process so both sides are crispy

  15. After baking, let rolls cool for 5-10 minutes

  16. Serve on a plate with your favorite dipping sauce
