Ingredients:

  • ½ tablespoon extra-virgin olive oil

  • 1 teaspoon lemon juice

  • ½ teaspoon smoked sweet Spanish paprika

  • 2 teaspoons minced chives

  • ½ teaspoon kosher salt

  • 2 ounces Spanish chorizo

  • 8 hard-boiled eggs

  • ½ teaspoon lemon zest

Directions:

  1. Mince chorizo.

  2. Cook with oil in medium heat, until crisp, for about 3 minutes

  3. Strain chorizo into bowl

  4. Halve the eggs crosswise and scoop yolks into a blender

  5. Pulse for 5 seconds and add 1 tbsp water, lemon juice and zest, smoked paprika, and 2 teaspoon chorizo oil

  6. Pulse until well combined

  7. Mix 1/2 teaspoon salt

  8. Transfer mixture to a small plastic bag

  9. Tear the corner of the plastic bag to make a small hole

  10. Pipe about 1 ½ tablespoon filling into each egg-half

  11. Top with chorizo and chives before serving
