Ingredients:

  • 5 pounds green or red cabbage, shredded

  • 3 tbsp good quality salt

  • 2 tsp caraway seeds, if desired

Directions:

  1. Mix cabbage thoroughly with salt and caraway seeds in a mixing bowl

  2. Let stand for 10 minutes

  3. Pack cabbage mixture down into a large glass jar

  4. Seal with a lid that is smaller than the opening of the jar

  5. Place a smaller jar filled with water on top of the lid

  6. Place in cool area overnight

  7. Press the cabbage down ever day or so for between 1-2 weeks to release air bubbles during fermentation process

  8. Place in an airtight container

  9. Store in the refrigerator up to 6 months
