  • 4-6 Japanese eggplants

  • Sea salt

  • ⅛ cup olive oil

  • 1 heaping Tablespoon crushed garlic

  • Juice from 1 lemon

Directions:

  1. Trim the ends from the eggplants and slice in half the long way

  2. Carefully score the flesh with short diagonal cuts

  3. Generously sprinkle eggplants with sea salt

  4. Allow the eggplant to sit for 20 minutes, until some liquid is drawn out

  5. Wipe the moisture from the eggplants with a paper towel

  6. Line the eggplant on a baking sheet, flesh side up

  7. Combine remaining ingredients in a small cup

  8. Coat the tops of the eggplants with the garlic mixture

  9. Roast at 400 degrees for 30-40 minutes or until eggplants are really mushy and creamy on the inside and skins’ slightly crispy
