Ingredients:

  • 3 zucchini

  • 1 Tablespoon sea salt

  • 2 Tablespoons coconut flour

  • ¼ teaspoon garlic powder

  • 2 eggs

  • ¼ cup coconut milk, canned, full fat

  • ½ cup blanched almond flour

  • ½ cup flax meal

  • ⅓ cup nutritional yeast

  • 1 Tablespoon dried oregano

Directions:

  1. Preheat the oven to 425 degrees

  2. Line a baking sheet with parchment paper

  3. Cut each zucchini horizontally in half

  4. Make 2 cuts in each direction to create 9 sticks

  5. Place the zucchini sticks in a colander

  6. Sprinkle zucchini sticks with salt

  7. Allow to drain for 1 hour

  8. After an hour, rinse beads of liquid on the zucchini with cold water

  9. Pat the zucchini sticks dry

  10. In a bowl, combine the coconut flour and garlic powder

  11. In another bowl, combine the eggs and coconut milk

  12. In a third bowl, combine the blanched almond flour, flax meal, nutritional yeast and dried oregano

  13. Take 1 tbsp of the egg mixture and transfer into the coconut flour mixture

  14. Mix the coconut flour mixture well to create a paste

  15. Dip the zucchini sticks in the coconut flour paste

  16. Dip in the egg mixture

  17. Sprinkle with the nutritional yeast mixture

  18. Place on the baking sheet

  19. Bake for 24 minutes while flipping halfway through the baking process

  20. Turn the high broil on for a minute or two to brown

  21. Serve with dairy-free ranch
